I’ve got a quick and simple recipe for you today

Low carb “bruschetta’s” (Serves 2)

Ingredients:

* 4 large / Portobello mushrooms

* 200 g Lean beef mince

* ½ an onion

* 1 garlic clove

* I tin of chopped tomatoes / Passata

* 60 g cheese

* Salt, pepper, and Italian herb seasoning (such as oregano, basil, thyme, rosemary) to taste

Method:

1) Lightly fry the chopped onion and garlic in 1kcal fry spray or butter / coconut oil (this will add fat)

2) Add in the beef and brown off

3) Mix the mince, onions and garlic in a saucepan with the chopped tomatoes / passata and simmer for about an hour (or leave in the slow cooker all day…nothing better than coming home to a warm, home-cooked, nutritious and filling meal!)

4) Scoop out the beef and the sauce into the mushrooms and top with cheese.

5) Place in the oven for about 15-20 minutes.

6) Serve with a side salad or some homemade chips!

Short on time?

Why not cook up triple the portions…

You could stuff courgettes one night…

Peppers the next

And mushrooms the night after!

Who’d have thought that ‘bolognaise’ could be so versatile

^^^ And you haven’t even had spaghetti yet…
