
I’ve got a quick and simple recipe for you today
Low carb “bruschetta’s” (Serves 2)
Ingredients:
* 4 large / Portobello mushrooms
* 200 g Lean beef mince
* ½ an onion
* 1 garlic clove
* I tin of chopped tomatoes / Passata
* 60 g cheese
* Salt, pepper, and Italian herb seasoning (such as oregano, basil, thyme, rosemary) to taste
Method:
1) Lightly fry the chopped onion and garlic in 1kcal fry spray or butter / coconut oil (this will add fat)
2) Add in the beef and brown off
3) Mix the mince, onions and garlic in a saucepan with the chopped tomatoes / passata and simmer for about an hour (or leave in the slow cooker all day…nothing better than coming home to a warm, home-cooked, nutritious and filling meal!)
4) Scoop out the beef and the sauce into the mushrooms and top with cheese.
5) Place in the oven for about 15-20 minutes.
6) Serve with a side salad or some homemade chips!
Nutrition (per 2 stuffed mushrooms)
Protein: 38 g
Carbs: 15 g
Fats: 21 g
