Gut health is the hot topic right now..

But for today?
I wanted to share a way to get some ‘legumes’ into your diet
AKA
Lentils / beans / chickpeas…
Cheap, easy, convenient and a good source of protein…
So here’s a recipe we did in our weekly live cooking on Friday:
Easy Lentil and tomato portobello mushrooms (with optional chicken)
Highlights from our weekly live cooking on Friday
Ingredients:
50 grams reduced fat cream cheese
2 tsp olive oil
400 grams tinned green
lentils
300 grams portobello mushrooms
15 ml apple cider vinegar
1 tsp dried basil
15 grams pumpkin seeds (optional to add on salad at the end)
125 grams cherry tomatoes, cut in half
40 grams reduced fat cheddar cheese, grated
1 clove garlic, chopped
1 banana shallot (echalion),
finely sliced / onion will do
50 grams rocket leaves or any salad leaves
1 tbsp extra virgin olive oil
Optional : add chicken
