Easy Chicken Dopiaza with Cumin Roast Potatoes
Serves 4
low cal cooking spray
2 red onions diced
4 garlic cloves chopped
1 inch piece of root ginger grated
I red chilli deseeded and chopped
500g chicken breast diced
1 TBSP garam masala
1 tsp ground cumin
1 tsp ground coriander
1 x400g tin chopped tomatoes
200 ml chicken stock
1 red pepper
1 TBSP chopped coriander
FOR THE POTATOES
700 g potatoes scrubbed and cut into large chunks
1/2 red onion finely diced
lo cal cooking spray
salt and pepper
11/2 tsp ground cumin
391 cals per serving
